Have a go at this super easy artichokes quiche, and if you feel like trying an excellent vegan pastry try this 3 cereals base, enjoy!


For the Pastry:
150 gr organic wholemeal flour
100 gr barley flour
50 gr rye flour
1 teaspoon salt
1/2 teaspoon brown sugar
60 gr EVO oil
100 gr warm White wine

For the filling:
4 artichokes
2 organic eggs (take them out in a vegan option)
1 tablespoon marjoram
300 gr stracchino cheese (use soft vegan cheese in a vegan option)
4 generous table spoons grated pecorino cheese (take them out in a vegan option)
1/2 clove garlic
EVO oil
salt & pepper


make the pastry by putting all the ingredients in a food processor.
Give it a whizz, take it out and roll the pastry onto a sheet of parchment paper to about 1/2 cm.
Make the filling, cut the artichockes in 8 slices, stir fry them gently for about 10 minutes with the crushed garlic, 2 tablespoons of olive oil, the marjoram, salt and pepper.

In the meantime beat the eggs with the cheeses, adjust with salt.
Pierce the pastry with a fork, arrange the artichokes, pour the egg and cheeses mixture on top.

If you have some pastry left proceed to make a lattice top.

Bake in a pre heated ventilated oven at 220° for 30 minutes!
