Broccoli are one of my favourite veggies, so full of nutrients and anti oxidants.
Unfortunately not many people like their taste.
Here’s a simple yet delicious way of combining them for a surprisingly delicate tasting quiche.
A winner even with young guests!

Ingredients for 4/6 people:

1 ready rolled puff/brisè pastry base
Fresh Broccoli 400 gr (1/2 florets)
250 gr Robiola or full fat Soft Cheese
100 gr smoked Salmon
1 organic Egg
Salt
2 table spoons Chives

Instructions:

Cut the Broccoli in little florets and bring them to boil in salted water for about 20 minutes. Drain and set aside.
Pre-heat the oven on at 210°C.
In a large bowl beat the egg and fold in the soft cheese and the broccoli. Keep working with a fork until you reach a creamy consistency.
Slice the salmon in small strips, chop the fresh chives and add to the mixture.

Roll out the pastry in a round baking tray or pie-dish and pierce the bottom with a fork.
Spoon the filling over the pastry making the surface even with a spoon.

Fold the edges over and bake for 30 minutes.
Leave your Quiche to cool for 10 minutes before serving it.
