Summer is approaching fast and with the increasing heat there is nothing better than a ginger and melon sorbet to soothe our desire for sweet and at the same time re-hydrate your body with vitamins, water and minerals.
This melon and ginger sorbet with strawberry sauce is easy to prepare and is very refreshing to the palate even between two savoury dishes.

Serves 6:

1/2 ripe yellow Melon
1/2 cup of Strawberries
1 cm of Ginger root
2 tablespoons Agave syrup
Star Anise seeds (optional)
1/2 lemon (juice)

Instructions:

Remove the pulp of the melon and cut it into cubes.
Freeze it for at least 6 hours or overnight.

Peel and grate the ginger, pour it into a blender, add a few teaspoons of agave syrup and some star anise seeds.
Add the chopped frozen melon and blend until you get the consistency of a fine slush.

Taste, season according to your taste and fill the sorbet glasses.
Separately, wash and dry the strawberries season them with a few drops of lemon juice and 1 tablespoon of agave syrup.
Pour the strawberry sauce on top of the melon sorbet in each glass before serving.
