Here’s a very quick and simple dessert: Orange, Ginger and Ricotta Mousse. This mousse is light in calories and tastes absolutely fresh and delicious.
It’s one of my favourite desserts especially during the holiday season if you are looking for a light alternative to the usual sweets.

Ingredients for 4 portions:

250 gr Ricotta cheese (or a plant based alternative of your choice)

2 table spoons plain Yogurt

1 organic Orange

1 small piece (1 cm) fresh Ginger

2 table spoons Agave syrup

2 table spoons crushed Almonds

 

Instructions:

Making this Orange, Ginger and Ricotta Mousse is extremely easy and you will only need three simple steps.
Spoon the ricotta in a large bowl and beat it together with the yogurt to a soft and fluffy mousse.
Grate the orange zest and put it aside. Peel and finely grate the fresh ginger and mix it with the grated orange.
Add both of them to the mousse together with the agave syrup and mix well.
Taste the mousse and check if it’s sweet enough. Adjust with more agave syrup if necessary.
Fill 4 little dessert pots and level the mousse.
Cover each one of them with clingfilm and refrigerate for at least 30 minutes.
In the meantime, roast the almonds and crush them to a semi fine consistency.
Sprinkle each mousse with half table spoon of crushed almond and serve!
