Here’s a super simple recipe of sweet Pumpkin Orange Zest and Chocolate chips Squares.
They are perfect for your coffee break or as a snack for the children. Please remember that it’s much better for you to bake children snacks and not rely on industrial snacks which are often full of sugar and excessive quantitie of gluten and hydrogenated fats.
500 gr Flour (I used Spelt and Kamut in equal quantities)
3 tablespoons Coconut butter
150 gr cooked and squashed Pumpkin
75 gr Dark Chocolate chips
1 Orange Zest
1 teaspoon ground Cinnamon
1 teaspoon Vanilla extract
100 gr raw cane Sugar
1 teaspoon dry yeast or 150 gr sourdough yeast
Dissolve the dry yeast with 1 teaspoon of sugar in 1 cup of lukewarm water and leave it to rest for 10/20 minutes.
Squash the cooked pumpkin with a fork and add the other ingredients.
Mix the flour with the yeast and add the rest of the ingredients.
Knead the dough.
Add some water if necessary or some extra flour should the dough be too sticky.
Leave the dough to raise covered with a kitchen cloth for 1 hour in a dry and warm place until it has doubled its size.
Shape the buns and put them back on a baking tray. Leave them to raise covered for another 30 minutes.
Bake at 190°C for 15 minutes.
Separate each square from the other while still hot with the help of a knife.
Leave to cool for at least 10 minutes before serving them.
These Sweet Pumpkin Squares are also perfect for breakfast. I normally cut them in a half, toast them and serve them with jam.
