Have you ever tried salt-crust cooking? Here is a quick, healthy and especially tasty way of preparing salmon fillets.

It will take just over 20 minutes for a perfect main course without any added fats cooked directly in the pan.

Serve this dish with a  fresh tasting sauce made with low-fat yogurt, sweet Dijon mustard and chopped fresh chives.

This Fillet of Salmon in Salt-crust is perfect and nutritious especially if served with any seasonal vegetables.

 

Ingredients for 4 people:

 

4 slices of fillet of Salmon, about 200 grams each, with the skin (do not remove it!)

400 grams of coarse sea Salt

 

For the sauce:

8 tablespoons of low-fat natural Yogurt

1 teaspoon sweet Dijon mustard

½ bunch of fresh Chives

Salt

 

Instructions:

 

Wash the salmon fillets and pat dry them with a paper towel.

Place them on a chopping board and carefully remove any bones.

Prepare a non stick casserole or deep pan pouring the salt onto the bottom and leveling well, reaching about a thickness of  1.5/2 cm.

Put the pan on the gas to medium-low and heat for 2-3 minutes.

Line the salmon fillets in the pan without any seasoning, cover and cook for 15-20 minutes, until the smell of  fish become pungent and the salmon surface will have formed a slight white layer. Don’t worry it’s the fish’s own good fat!

With the help of a spatula gently detach the fillets from their skin, (which will eventually stick to the salt crust) and place them on a plate.

Meanwhile, prepare the yogurt sauce by chopping the chives and mixing it with the other ingredients.

Taste and season with salt, be careful not to make it too salty!

Serve each salmon fillet with a generous dollop of yogurt sauce.
