This Pesto is an amazing sauce for your pasta dishes.
It combines the healthy nutritional properties of the avocado with the lovely flavours of the tomatoes and the crushed pistachios, it’s very easy to make and tastes absolutely delicious!

Ingredients for 2/3 people:
1 large ripe Avocado
10/12 Cherry Tomatoes
2 table spoons crushed roast Pistachios
Place the avocado lenghtway and cut it in two halves.
Remove the seed with the help of a spoon.
Scoop out the flesh and place it in a bowl.
Squash the flesh with a fork and reduce it to a creamy pulp.
Wash, dry and finely slice the tomatoes.
Place them in a colander with a pinch of salt for about 10 minutes to get rid of vegetation water.
Mix the pulped avocado with the tomatoes, season with salt, pepper and a drizzle of olive oil.
When the pasta is ready spoon 3/4 table spoons of pesto on each plate and add 2 tea spoons of crushed pistachios.
Decorate with a drizzle of olive oil and serve immediately!
