This Velouté of sweet potato, courgettes and fresh mint is a very light dish, rich in vitamins with a really delicate taste.

It’s also perfect for children, although to make it more appetising you can take off the fresh mint and serve it with olive oil and some sprinkled fresh Parmesan cheese instead.

 

Ingredients for 4 people:

 

1 medium sweet Potato (350/400 gr)

2 medium Courgettes/Zucchini (400 gr)

1 small Onion

3 tablespoons finely chopped Carrot and Celery

1/2 tablespoon  chopped fresh Mint

EVO Oil

 

Instructions:

 

Chop the carrots, celery and onion and gently cook with half a cup of water for about 10 minutes.

Add the chopped courgettes and potato, 500 ml of boiling water, cover and simmer gently for 30 minutes adding some more water if necessary from time to time.

When the vegetables are cooked adjust with salt, add the finely chopped fresh mint, and with a hand blender give your velouté a good creamy consistence.

Serve the velouté with a drizzle of olive oil, some more fresh mint and if you like a spoon of fresh cream cheese or Ricotta mousse, as long as it has a delicate flavour.
