I have seen many recipes for Cauliflower Crust Pizza recently. Some of them very long, complicated and quite frankly not worth the effort. Here’s my version, quick, simple and really tasty!
I have to say, I was initially quite skeptical but in the end pleasantly surprised with the result.
For all of you looking for a Paoleo, Grain free or simply low calories Pizza, here it is!

Ingredients for 1 Pizza Base:

1 medium Cauliflower head (300/400 gr)
1 organic Egg (can be substituted with 1 table spoon of Chia Seeds soaked with 3 tablespoons of water in a vegan version)
1/2 teaspoon dried Oregano
1 tablespoon grated Parmesan (optional)


Wash the cauliflower and remove the leaves at the base if there are any.
Grate with a cheese grater and reduce the cauliflower to a medium/fine grain.
Put the riced cauliflower in a microwave steamer with a double layer and microwave at high temperature for 8/10 minutes.
Let cool at room temperature and squeeze excess water with the back of a spoon.
Transfer the cooked cauliflower into a bowl, add the rest of the ingredients and mix well.
Pour the mixture onto a baking tray lined with parchment paper and press with the help of your hands to distribute the pizza base evenly in a round shape.
Switch oven on at 220°C (425°F)
Bake the base for 10 minutes until golden.
Take out the half cooked base and flip it onto another sheet of parchment paper.
Bake for further 5 minutes.
Once the cauliflower crust is nice and golden on both sides you can proceed to garnish it with your favourite toppings.
Bake again for further 10 minutes.
