Looking for an alternative to the classic meat burger or simply looking for a clever idea to encourage children to eat more vegetables? Try this delicious Veggie Burger, my kids are totally in love with it!
Ingredients for 4 burgers:
1 can cooked Chickpeas (roughly 250 gr)
250 gr fresh Spinach
2 generous tablespoons Tehina (sesame paste)
1/2 teaspoon ground Cumin
1/2 teaspoon sweet Paprika
1/2 teaspoon Garlic powder
fresh Chilli Pepper, finely chopped (if liked)
Drain the chickpeas and put them in a food processor.
Blend for a few seconds leaving the chickpeas quite coarse, you do not want a fine paste.
Blanch the spinach in a little salted boiling water, drain them and, once cold, chop them finely.
In a large bowl mix the minced chickpeas with the spinach, add the spices and the tehina.
The burger mixture should be quite firm.
Shape some balls with the palm of your hands and form some medium sized burgers.
Refrigerate the burgers for 30 minutes so that they can set well.
You can either cook your Veggie Burgers in the oven at 180°C (350° F) for 20\25 minutes or in a non-stick pan for about 7 minutes per side, until gold and crispy.
Garnish and serve like a classic burger.
