Hummus is definitely one of my favourite dips. I love it in a traditional version, or with roast peppers, with avocado and also in this delicious version with cooked Beetroot.
This recipe of this Beetroot Hummus is super easy, nutritious and tastes amazing!
240 gr cooked Chickpeas (drained)
200 gr cooked and peeled Beetroot
1 tablespoon natural Yogurt (for decorating)
2 tablespoons Tehina
1 teaspoon Salt
1/2 Lemon (juice)
2 tablespoons natural Yogurt
1 clove Garlic (crushed)
50 ml natural Water
Slice or cube the cooked beetroot and put it in a food processor together with all the other ingredients.
Blend until smooth and creamy.
Taste and adjust with salt or pepper if you like.
Decorate with a tablespoon of natural yogurt and some chopped parsley if you like.
Serve with raw vegetables or unleavened bread crackers.
