The common belief that a vegan recipe somehow lacks in flavour is in my opinion completely wrong. This recipe will provide an excellent pasta sauce and a great substitute to meat if you love Shepherd’s Pie.

350 gr packed braised seitan cutlets
1 big carrot
1 medium onion
1 stalk of celery
425 ml tomato sauce
2 table spoons EVO oil
1 tea spoon ground nutmeg
1/2 cup of water
4 table spoons white wine
1/2 cup soy milk
Sea salt to season
Place the seitan cutlets on a chopping board and slice them to cubes.
Place the diced seitan in a food blender and give it a whizz to make it resemble minced meat.
Grate the carrot, onion and celery together to a fine consistency, if you like you can use a food blender as well.
In a non stick pan pour the water, add the grated vegetables and simmer gently for 5/10 mins.
Add the olive oil and the minced seitan, cook on a gentle flame for 3/4 minutes.
Pour the wine and cook for further 5 mins uncovered.
Add the tomato sauce, the soy milk, the ground nutmeg and simmer gently for 30 min with the lid on.
Stir occasionally and season with salt.
